Cranberry Tuesday: Fall Recipe

It's Cranberry Tuesday and the last Tuesday of the month....is Fall Recipe day!  So get a set of recipe cards or a notebook and start creating a fall recipe collection.  Fall is one of my favorite recipe times because you can start having some savory soups and the weather cools down enough to bake some delightful dishes!

Hamburger Crunch
2 lbs ground beef
1 Tablespoon of onion, minced
2 10 3/4 oz. cans of tomato soup
1 teaspoon chili powder
4 cups corn chips
8 oz package shredded Cheddar cheese
Brown hamburger and onion together in a large skillet over medium heat.; drain. Stir in soup and chili powder.  Spread in an ungreased 13 x 9 inch baking pan and top with corn chips.  Baked uncovered at 350 degrees for 20- 25 minutes. Remove from oven, sprinkle cheese on top.  Bake an additional 5 minutes or until cheese melts. Serves 6-8
